Butter Rich Pecan Pie

June 2003 Recipe

INGREDIENTS:
1 (10 inch) unbaked pie shell ¾ cup honey
1½ cups firmly packed brown sugar ½ cup (1 stick) butter
4 cups (1 pound) pecans  www.pecan.com ¼ cup heavy cream

Heat oven to 350 degrees. Bake pie shell for 10 minutes.

Meanwhile, in medium saucepan, combine brown sugar, honey and butter; mix well. Bring to a boil. Boil 3 minutes, stirring occasionally. Remove from heat; stir in cream and pecans. Pour into partially baked pie shell. Place pie on cookie sheet.

Bake at 350 degrees for 30 to 35 minutes or until filling is bubbly. Cool completely on wire rack for 1½ to 2 hours before serving.
Makes 8 servings.
