Caramel Popcorn

Mountain States Pecan
July 2003 Recipe

INGREDIENTS:
1 CUP BUTTER 2 CUPS FIRMLY PACKED BROWN SUGAR
½ CUP CORN SYRUP 1 TEASPOON SALT
½ TEASPOON BAKING SODA 1 TEASPOON VANILLA
2½ CUPS CRACKIN’ FRESH PECAN HALVES OR LARGE PIECES 6 QUARTS POPCORN
½ TEASPOON SALT MARASCHINO CHERRIES (HALVED)

MELT BUTTER, STIR IN BROWN SUGAR, CORN SYRUP AND SALT.  BRING TO BOIL, STIRRING CONSTANTLY.  BOIL 5 MINUTES WITHOUT STIRRING. REMOVE FROM HEAT, STIR IN BAKING SODA AND VANILLA.  PLACE POPCORN AND PECANS ON BUTTERED COOKIE SHEET.  GRADUALLY POUR SYRUP MIX OVER TOP, STIRRING LIGHTLY.

BAKE FOR 1 HOUR AT 250 DEGREES F.  STIR EVERY 15 MINUTES
